くどう珈琲のオーナー兼ロースター・工藤が手がける焙煎は、苦くないのにコクがあり、甘い香りと程よい酸味が絶妙にバランスしています。中煎りに仕上げることで、コロンビア北部ノースサンタンデール地区のスペシャルティコーヒーが持つ、フルーティな風味とシルクのような口当たりを最大限に引き出しました。
使用している生豆は、小規模農家が丁寧に栽培・精選したもの。トレド、ラバテカ、チタガなど、効率重視ではなく品質にこだわる地域を選び、さらに独自の「トレド plus」プロジェクトにより、厳選されたロットだけを使用しています。
カフェイン除去は、ドイツで行われる“液体二酸化炭素抽出法（Liquid CO₂ Method）”を採用。
この製法により、コーヒーの持つ風味をしっかりと残しながらも、カフェインのみを取り除いています。だから、カフェインレスとは気づかれないほどのしっかりとした味わい。

Crafted by Kudo, the owner and head roaster at Kudo Coffee, this decaf offers a rich, sweet aroma, balanced acidity, and a depth of flavor without bitterness. Roasted to a medium profile, it brings out the fruity complexity and silky mouthfeel of specialty beans from Northern Colombia’s Norte de Santander region.
The coffee is sourced from small-scale farmers in Toledo, Labateca, and Chitagá—areas known for quality-focused production rather than mass efficiency. Through our “Toledo Plus” project, we incentivize growers to meet higher selection standards, and only the best lots, chosen through careful cupping, make it into our lineup.
Decaffeination is done in Germany using the Liquid CO₂ Method, which gently removes caffeine while preserving the coffee’s original character. The result? A cup so flavorful and clean that even seasoned coffee drinkers might not realize it's decaf.
